5 Family Favorites* Dinner Edition*
Keeping It Simple Is Best
Something I have learned from cooking for my family for the years is that the easier I make the meals for my family the more willing they are to eat things. For a refresher my 2 kids are 6 and 9.. they have very different tastes in food.
Carter is a total meat eater, if he didn't have to eat a veggie for his whole entire life he would be so ok with that.. especially green beans.. those could all die off of the planet and he would live on happily ever after lol.
Alexis started out as a total vegetarian.. slowly she has allowed more than chicken into her diet.. but her love for veggies has not gone away.
I never forced my kids to eat what they don't like, but I never stopped introducing and offering the item to them. Instead of offering a huge portion of something (like green beans), I will give small baby sized portions of the item. I will also tell my kids that their taste buds change all the time and maybe they don't like something a week ago, but today is a new day and they could love it. This does seem to get them to try the things again and again. It is something that they understand can happen therefore they will try.
Any Parent will tell you that having your young children try new things is a gamble.. will they like it? Sometimes my son who is undoubtedly my pickier eater will say he doesn't like something.. and my daughter will follow suit.. of course lol
I have come up with a list of the 5 things that are family staples in my house and always a winner!
There isn't too much to explain a bout this meal because I mean who can go wrong with a taco? Either chicken or turkey.. my kids are sure to gobble this tasty treat up!
2. Rice and Beans
I can make this on the stove top, instant pot or rice cooker- which makes cooking this meal the most convenient. This is the fastest option out of all the options and if my kids seriously had to have something ALL the time, it would be this. The " add in" options are endless, may family loves to add things like salsa, cheese, avocado and maybe some tomato.
3. Chicken Enchilada Soup( this soup changes each year)
This one is an oldie but goodie... I used to make it often and then stopped because it maybe got a little spicy, but since adding it back to my recipe line up it has been highly requested. I make it at least 2 times a month I think.
4. Spaghetti and Meatballs
Home made meatballs and all day simmered sauce... its a total winner. The kids even love to help make this meal!When the kids do help they enjoy making the meatballs and the sauce, they also are sure to eat it because THEY made it. Honestly, if I don't have time for all day meals I use frozen meatballs and a jar of sauce that I just season it up. The kids don't know the difference!
*All star tip, if you have an Air Fryer cook the meatballs in that.. OMG... so tasty!
5. Breakfast for dinner
Whether it is eggs and bacon, french toast or pancakes, the kids always love breakfast for dinner. When I was a kid we used to have breakfast for dinner once a week. We spent the mornings rushing around and never got a chance to have breakfast together, so my mother said that once a week we would have breakfast together for dinner. She always made different things, never once did my brother and I ask for something else.
A few things that my kids blurted out to me that we have for dinner are things that I don't even cook , like fast food or restaurant food. I can't like we do eat that often enough.
I think for me the main point of dinner has always been to be together. I love that at the end of a day we all get to sit together and talk about things that have happened or what we want to happen. We have lot of laughs around dinner time in my house. In a time when the world is all a rush I really enjoy the times that we come together. I will always try to keep this going...even when my kids are grumpy teenagers who don't want to.
I am excited to look back on this blog and see what the kids think are their favorite meals in year or two!
